Happy 10th Birthday Gus + Puppy Cupcake Recipe

Gus, 10 years ago you came into this world today, Cinco de Mayo! At 8 weeks you joined Romy and me, and we officially become a family. You bring so much happiest, color, and crazy to our house and we can’t imagine life without you in it. We love you so much, and I hope your love being spoiled today!

Since we can’t have the big party that I was planning, I still made puppy cupcakes for all of Gus’s best pals!

Puppy Birthday Cupcake Recipe:

  • 1 egg
  • 1/4 cup peanut butter
  • 1/4  cup of olive oil
  • 1 tsp vanilla extract
  • 1/3 cup of honey
  • 1 cup of shredded carrots
  • 1/2 cup of unsweetened apple sauce
  • 1 cup of flour
  • 1 tsp of baking soda

Preheat oven to 350 degrees F

Directions:

Combine egg, peanut butter, oil, vanilla, carrots, honey, apple sauce, flour, and baking soda. Greece each cupcake tin and then scoop batter into each tin, fill only halfway to leave room for the rise. Bake in the oven for 40 mins. Take out and let cool completely before frosting.

Puppy Frosting Recipe:

  • 1/2 cup plain greek yogurt
  • 1/4 cup peanut butter

Directions:

Whip together with electric mixer. I like to put my frosting in a plastic bag and cut a corner off to frost with the bag.
