Fun fact, I worked at Buffalo Wild Wings from high school until college. Starting as a greeter/cashier, serving, bartending, and I even did a marketing internship with them. Plus, both my brother’s worked there with me!

Regardless, I have grown quite fond of boneless buffalo wings since my time working there but could go without the extra deep-fried calories. Until now, I have found the perfect cauliflower buffalo bites, that I make gluten-free!
Gluten-Free Cauliflower Buffalo Bites Recipe:
- 3/4 cup flour (I substituted gluten-free pancake mix)
- 1 tsp paprika
- 2 tsp garlic salt or powder
- 1 tsp salt
- 1/2 tsp ground black pepper
- 3/4 cup of milk
- 1 head of cauliflower
- 1/2 cup of buffalo sauce
- 2 TBL of olive oil
Preheat oven to 450 degrees
Line of cookie sheet with parchment paper and greased
Direction:
In a large bowl combine the flour, paprika, garlic powder (or salt), salt, pepper, and milk and set aside. Break the head of cauliflower into florets that are about 1 1/2 inches wide. Dip each cauliflower floret into batter, coating each piece evenly. Place each piece onto the greased cookie sheet, making sure they are not touching each other. Back for 20 minutes and flip. Meanwhile, in a small bowl mix buffalo sauce and olive together. When you take the bites out of the oven to flip, use a brush to coat each of the florets. Bake for another 20 minutes. Eat immediately with either ranch or blue cheese dipping sauce.
